Caprese Salad


As someone who has not been especially fond of cheese, I was as surprised as anyone when I realized that I enjoy eating fresh mozzarella.  I think it's the light flavor and soft texture.  I was eating it as I was cutting it.  It was marvelous.

I had a few friends over for a potluck dinner a few weeks ago and I decided to make Caprese Salad.  I had personally never eaten it before, but my roommate last year loved it.  The recipe I followed can be found here:  http://thepioneerwoman.com/cooking/2011/06/caprese-salad/

I love the simplicity of Caprese Salad.  And the colors look wonderful together.  It's the perfect dish for the summer, light and delicious.  I used plum/Roma tomatoes, Italian basil, and the fresh mozzarella in the packages sold by the shredded cheeses in the store.

The recipe uses a simple balsamic reduction, which was kind of fun since I had never done any kind of reduction before.  And just like Pioneer Woman mentions, it does make the dish look especially nice.  I would definitely make this again (maybe even tonight).
